Moroccan Style Chicken with Preserved Lemons and Garlic

Hi everyone! I’m so excited to share this recipe with you all! I’ve been learning so much about the Moroccan culture since I’ve been married (newlywed as you know). Moroccan food is just so delicious! When my mother in law came to visit us from Morocco she introduced me to Preserved Lemons. I’d never heard or seen them before but apparently they are very popular in North African cuisine and used often. These lemons are used in tagines, sauces, and stews just to name a few. It’s definitely a pantry staple in the North African culture. Ever since I was introduced to this delicious condiment it’s been a staple in my kitchen as well.

Although, my mother in law taught me how to make a few traditional Moroccan dishes during her stay I’m by no means an expert nor do I have the time to dedicate to countless hours in the kitchen cooking up masterpieces. Therefore, I have taught myself easier and quicker recipes using some traditional North African condiments such as these Preserved Lemons. Now, my mother in law makes her own preserved lemons but I buy mine from the international market. You can probably find them there as well or any Middle Eastern or Mediterranean market. You can also purchase them online. I found them on the World Market website but you can probably find them on Amazon also if you don’t live by an international market.

Moroccan Style Chicken with Preserved Lemons and Garlic

  • 4 Boneless Skinless Organic Chicken Thighs
  • 1 tbsp extra virgin olive oil
  • 2 preserved lemons
  • 3 cloves of garlic
  • 1 tbsp paprika
  • 1 tbsp pepper
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1/2 lemon for garnish
  1. 1.Rinse chicken thighs under cool water and pat dry with a paper towel.

  2. 2.Heat skillet (I use a non-stick skillet) on medium heat with extra virgin olive oil.

  3. 3.Cut one preserved lemon into 4 pieces and rub onto both sides of all chicken thighs.

  4. 4.Season chicken with all dry seasonings on both sides.

  5. 5.Place chicken onto skillet and add the 3 garlic cloves and pieces of preserved lemons that you used to rub the chicken as well as one preserved lemon freshly cut into 2 or 4 pieces into skillet on top and on the sides of the chicken for added flavor.

  6. 6.Cover skillet and cooked over medium heat for about 20- 30 minutes or until chicken is a nice golden brown color. Turn chicken over halfway through cooking time.

  7. 7.Once finished plate chicken or serve in skillet and add some fresh lemon for garnish if you wish.
